Product Description The literal translation of the French words "Tete de Moine" is "Monk Head". Although this fine Swiss product was first created by monks, it is now produced by the lay community. Tete de Moine, made in the Swiss Alps near the town of Bellelay from rich unpasteurized cows' milk, is a sharp cheese with a full, nutty flavor. Its intense flavor is even more pronounced when compared to other cheeses from Switzerland, like Gruyere and Emmental. A true specialty item, Tete de Moine deserves to be regarded as one of the world's great cheeses.
Made from raw cow's milk. Aged over 60 days.

To really enjoy this cheese you should have a Girolle. This is a board with a rotating slicer blade that you turn. This results in beautiful flower petal shaped slices that are ideal for getting the most from the cheese. Search for "Girolle" as they are not in stock at the moment I can't offer a number. There is a combination available from another vendor "B0000DK4XT" As to the cheese it is really special. At first scent it is a bit intimidating but let it come up to temperature and you will have something wonderful. Most likely you will only use half of this in one setting unless you have a lot of company. Terrific setup for parties.
